Well, whole bean coffee after it roasted has about the same shelf life of bananas, or about 4 weeks. The first 13 1/2 days after roasting the beans will out-gas CO2 and that protects the compounds that make tasty coffee to break down in the face of oxygen. If you grind coffee it will start to exhibit off flavors in 24 - 48 hours because it has more surface area exposed to oxygen. Espresso grinds can exhibit off flavors in minutes. ...
