Monkel’s Best is basically a bright Virginia with two different casings. I strip 2 lbs of bright and half I case with blackberry casing and the other half with tonka bean casing. I have found it to age well after stoving under pressure for 4 hours at 200F
Blackberry casing is just 100g water to 100g sugar and spoonful of Brewer’s Best Blackberry and a cap full of white vinegar. Bring to a boil, stir until clear Let cool and spray 2 oz to 1 pound of whole leaf. Let sit overnight in a trash bag with the air squeezed out.
Tonka casing is 100g molasses to 100g water and a tonka bean tossed in with a cap full of white vinegar. Bring to a boil probably 5 minutes. Let cool. 2oz sprayed on 1 lb leaf. Let sit overnight in a trash bag with the air squeezed out.

Took the arm off a cheap Amazon meat slicer and mounted it to a 2x4 and it has a backstop to set the thickness of the slice. It works great and slicing up plugs quickly with a consistent thickness.
